Game sales and consumption is on the increase and why not, it’s affordable, naturally fed, free range and full of flavour.
The school is set in lush Cheshire countryside surrounded by wild rabbits, pheasants, partridge and other game. We’ll take rabbit and pheasant from their natural state and create some hearty dishes from them. After skinning, jointing and trimming the rabbit you’ll braise it in beer topped with thyme & mustard dumplings; you’ll also make rabbit satay.
For lunch you’ll make a warm partridge, pear and hazelnut salad. Finally we’ll pluck, dress and truss the pheasant ready for roasting.
Price: £160.00 including ingredients, tea, coffee, refreshments and lunch. Equipment and aprons are provided for the day.
All the products are to take home.
